Vin chaud encompasses preparations of spiced, sweetened wine, served piping hot, traditionally associated with Christmas markets. Cinnamon, cloves, star anise, and orange or lemon peel infuse in the wine, which is brought up to temperature without being boiled, to preserve its aromas. In Alsace, two traditions coexist: that of the local dry white wine (Pinot blanc, Pinot gris, Sylvaner, Riesling) and the older tradition of spiced red wine, inherited from medieval hypocras.
