Official quality sign
PGI (IGP)
A single step is enough to link a product to its territory.
The Protected Geographical Indication links a product to a place through a quality, reputation or characteristic that can be attributed to it, without requiring everything to happen there: only one of the stages — production, processing or preparation — must take place in the area, as the raw material may come from elsewhere. This flexibility is the very essence of the sign: it protects localised know-how where PDO (AOP) protects an entire production system. A ham can thus be recognised as PGI because it has been salted and dried for centuries in a specific climate, regardless of the origin of the pork. PGI was established by Europe in 1992, at the same time as PDO and TSG (STG).
