Official quality sign

TSG (STG)

A recipe, not a place. The sign that protects a way of making, wherever it is done.

Traditional Speciality Guaranteed recognises no geographical origin: it protects a traditional composition or method of production — the way of making itself. Any producer, wherever they are located within the European Union, may claim it provided they comply with the registered specification. Established in 1992 alongside PDO (AOP) and PGI (IGP), it remains the rarest of French official signs, and this rarity stems from its very purpose: in a country where value is built on the link to terroir, few sectors choose a sign that, by design, refuses to take it into account.
