Two islands pressed against each other, one volcanic and humid, the other limestone and dry.

Guadeloupe is an archipelago, and its central dish tells of its geology: Basse-Terre is a volcanic island, covered in rainforest and watered by the trade winds; Grande-Terre is a limestone plateau, drier, historically devoted to sugar cane. Two soils, two agricultures, just a few hundred metres apart.

The Creole table was born of this geography and several layered heritages — Amerindian, African, European, Indian. Tropical roots and tubers, colombo spices, chillies, European counter-season fruits: melon, pineapple, citrus fruits that ripen when Europe produces none.
