This category brings together culinary oils benefiting from a PDO (AOP) or a PGI (IGP) — predominantly olive oils: those of Les Baux-de-Provence, Aix, Nice, Nîmes, Nyons, Provence, Haute-Provence, Languedoc and Corse each bear their own appellation. Each PDO defines authorised olive tree varieties, a precise geographical area, a stage of ripeness at harvest, and organoleptic criteria (green fruitiness, ripe fruitiness, black fruitiness). Added to these is Huile de noix du Périgord, cold-pressed according to artisanal know-how. Huile d'olive de Corse PDO — Oliu di Corsica — draws its own from endemic varieties: Sabine, Ghjermana, Capannace, Raspulata.
