Terroir pastry and bakery brings together the cakes, brioches, tarts and biscuits emblematic of a region, made from worked dough baked in the oven. It brings together grand celebration pastries (baba au rhum, gâteau basque, tarte Tatin, pithiviers) as well as Vendée brioches and gâches, Breton specialities (far, kouign-amann, gâteau breton), regional biscuits (madeleine de Commercy, biscuits roses de Reims, macarons de Nancy or those of Amiens), and more rustic preparations such as broyé du Poitou or fouace. It also covers savoury bread from traditional baking, exemplified by the bretzel alsacien and its distinctive knot dipped in a lye bath, as well as Alsace's sweet heritage influenced by the German-speaking world — kouglof, bredele, käsekuchen, leckerlies. Each speciality bears the name of a town or region and perpetuates a craft handed down from generation to generation.
