The Provençal gathering of olive mills in February, once the autumn milling has yielded its vats.
France Olive, the French olive interbranch organisation, organises this competition every winter, reserved for oils from Provence-Alpes-Côte d'Azur. It is held in February, a month before the national competition for designations of origin — early enough for the oils from the previous harvest to be at their peak.
The awards list falls into two halves. Seven categories judge the designations of origin one by one: Aix-en-Provence, Vallée des Baux-de-Provence, Haute-Provence, and Provence, each divided into classic oil and matured olives — oils with a so-called 'traditional' flavour, obtained from olives lightly fermented before crushing. Three other categories, open to the whole of France, no longer judge origin but the sensory profile: intense, matured, or subtle flavour.
It is the only competition in the benchmark to award prizes to Haute-Provence PDO (AOP).
