Brittany

Butter is salted here for a specific reason: Bretagne never paid the salt tax.

The gabelle, a royal tax on salt permanently established in the 14th century, drove the rest of France to unsalt its butter to escape the tax. Bretagne, an independent duchy when it was introduced, was exempted — and remained so after the union of 1532, the exception having been negotiated in the treaty. Salted butter is therefore not a regional taste: it is a fiscal relic that became a signature.

All around, a peninsula battered by the tides and a coastal agriculture: the northern 'golden belt', where the Roscoff onion, artichoke and cauliflower benefit from a frost-free climate; the Guérande salt marshes, harvested by hand; and buckwheat, that buckwheat that grows in poor soil and gave rise to the galette.
