The island is a mountain massif set in the Mediterranean: you go from the coast to two thousand metres in just a few kilometres. This verticality imposed transhumance — herds move up in summer and back down in winter — and shaped a diet based on preservation, where food is dried, salted, and smoked over chestnut wood.

The chestnut grove lies at the heart of the system: it has fed people with flour and pigs with acorns and chestnuts, giving the island's charcuterie — coppa, lonzu, prisuttu, figatellu — a fat and flavour all its own. As for brocciu, it is born of the whey recooked after cheese-making: nothing is wasted.
