Nord-Pas-de-Calais

The region's emblematic vegetable was discovered by accident, in a cellar, around 1830.

A Belgian gardener noticed that wild chicory roots forgotten underground, in the dark, had produced a compact, white bud. Deprived of light, the plant grows without producing chlorophyll: the endive was born. The technique was replicated and spread around 1850, and the vegetable crossed the border at the end of the century to become the “pearl of the North”.

The rest of the regional table owes its character to a cool climate and rich soil: potatoes, smoked garlic, field-grown vegetables; slow-simmered dishes — carbonnade, potjevleesch — and Maroilles, a washed-rind cheese of monastic origin whose powerful aroma contrasts with a surprisingly mild paste.
