Pays de la Loire
The land of farm-reared poultry, where each basin has raised its own breed and defended its name.

Between Maine, Anjou, Vendée, and the pays nantais, the rearing of farm poultry has been structured around basins that each bear their own name — Loué, Challans, Ancenis, Cholet. Chickens, ducks, geese, and guinea fowl are reared outdoors on grassy runs, within long-established supply chains.
The soil and water do the rest: the marshes of Vendée and Brière, the Nantais vineyards, the sands of Noirmoutier that produce an early potato, the mogette that is cooked slowly. The table here is hearty — rillettes, rillauds, buttery brioches, gâche, garlic-rubbed préfou — and the Loire brings its fish.
