Bloomy-rind cheese

A delicate, downy white bloom covers these soft cheeses — Brie, Camembert, Chaource — the sign of surface ripening driven by noble moulds.

12 listed products

This category brings together unpressed soft cheeses whose rind becomes covered in a white down (Penicillium candidum) during ripening — Brie de Meaux, Brie de Melun, Camembert de Normandie, Chaource, Neufchâtel, Saint-Marcellin, Brillat-Savarin. The centre remains supple and creamy, becoming runny to the core as it matures. It differs from washed-rind cheeses, whose moist, orange-tinted rind is, by contrast, the result of repeated washing during ripening.
