Legumes — also known as pulses — are plants whose dried seeds are eaten (lentils, chickpeas, beans, broad beans). The Lentille verte du Puy was the first among them to obtain an Appellation d'Origine — the INAO classifies it among pulses. Pale green coat streaked with dark blue-green marbling, thin skin, non-floury kernel: it cooks quickly, and that is what sets it apart. Rich in plant protein, iron and fibre, these crops have as much agronomic as culinary value.
