Burgundy

A cattle bocage, a mustard, a snail: Bourgogne eats differently from how it drinks.

Beyond the vineyard slopes that made its reputation, Bourgogne is first and foremost a land of grass. The Charolais bocage, between the Loire and the Saône, gave its name to a cattle breed reared for meat — a bocage of living hedgerows, enclosed meadows and white cattle that has no equivalent elsewhere.

The Burgundian table was built on these long-keeping products and on what the vineyard allows: mustard, long tied to verjuice; the snail gathered in the vineyards; pain d'épices de Dijon. Cheeses here are often washed-rind — époisses, soumaintrain — a family with a moist, aromatic rind that requires patience and a cellar.
