Origins and early history of the product

Époisses takes its name from the village of Époisses, in Côte-d'Or, between Auxerre and Dijon. Oral tradition attributes its creation, in the early 16th century, to a community of Cistercian monks who settled in the village. This know-how was handed down to the farm women of the Auxois villages, who continued making the cheese when the monks departed Époisses.

Terroir and geographical roots

The appellation area extends from southern Haute-Marne to western Côte-d'Or, reaching the borders of Yonne, across two natural regions with distinct terroirs: Auxois-Terre Plaine, with its clay-limestone bocage terrain, and Châtillonnais-Plateau de Langres, with its lighter limestone soils. The milk comes from cows of local breeds — Brune, Montbéliarde and Simmental —, fed on forage sourced exclusively from the appellation area, free from GMOs. The marc de Bourgogne used for washing the rind, itself a product of the local terroir, contributes to the cheese's characteristic colour and aromas.

Heritage and local culture

Époisses quickly met with acclaim, enjoyed even at the court of King Louis XIV. In 1820, the gastronome Brillat-Savarin proclaimed Époisses the "king of cheeses", sealing the renown of the Burgundian terroir. Production declined sharply during the interwar years due to a shortage of labour, to the point that maturation ceased in 1954 — the cheese came close to dying out. Passionate producers revived the sector as early as 1956.

Tasting & pairings

Époisses — AI-generated illustration AI-generated illustration

Époisses is best enjoyed at room temperature (remove from the refrigerator 1 hour beforehand). Served on a cheeseboard, it deserves pride of place at the end of a meal. It pairs magnificently with a Gevrey-Chambertin or a Pommard (red Burgundy wines), or even, counterintuitively, with a Sauternes or a Gewurztraminer vendanges tardives. On lightly toasted country bread or walnut bread.

Fromagerie Berthaut

Family business — founded in 1956

Fromagerie Berthaut presents itself as a family business founded in 1956 in Époisses (21460) by Robert and Simone Berthaut, a young farming couple. According to the brand's history, they revived a moribund sector: cheese production had virtually vanished from commercial trade following the heavy toll of two world wars and rural depopulation, and the couple reportedly collected the traditional know-how from local grandmothers before restarting production in their home cellar; obtaining the AOC, thirty-five years later in 1991, sealed this revival. The Berthaut name has since remained so closely bound to Époisses that some Burgundians still refer to the cheese by this name alone.

Located in the heart of the village of Époisses, the dairy now produces a range of matured cheeses — Époisses PDO (AOP), Soumaintrain PGI (IGP), Affidélice au Chablis, Aisy Cendré, and Trou du Cru. Alongside these cheeses, its on-site shop offers other regional specialities (mustard, anis, honey, wine, homemade jams, herbal teas, condiments, walnut, hazelnut and rapeseed oils, terrines) as well as other regional cheeses (Comté, Morbier, goat's cheese, Cîteaux, ewe's milk cheese).

GAEC des Marronniers

GAEC

In Origny, in the heart of the Châtillonnais in Côte-d'Or, GAEC des Marronniers brings together two farmers — Serge and Nicolas Jacquinot — and two artisan cheesemakers, Caroline and Alain Bartkowiez. Their herd of around sixty dairy cows of the Brune and Montbéliarde breeds, fed exclusively on forage and pasture from the holding, supplies milk to the Marronniers cheese dairy, adjoining the farm. The milk, collected while still warm, is transported without delay to the cheese dairy — an integration that makes it possible to produce a raw-milk farmhouse Époisses without having to reheat it.

The cheese dairy makes and matures its cheeses according to traditional methods, using marc de Bourgogne, and offers farmhouse Époisses for direct sale alongside other specialities: plain or herb fromages blancs, yoghurts, crème fraîche and milk. It is open from Tuesday to Saturday, from 9:00 to 12:00 and from 14:00 to 19:00.
