Normandy
A bocage of apple trees and lush grass, and milk that has yielded four cheeses within a hundred kilometres.

The oceanic climate, mild and damp, keeps the grass growing almost all year round: Normandie is dairy country before anything else. The bocage — hedgerows, standard apple trees, enclosed meadows — is home to a local breed, the Normande, whose rich milk built the reputation of the butter and cream.
Camembert, Livarot, Pont-l'Évêque, Neufchâtel: four cheeses, four villages, four different rinds, within a very small radius. The sea completes the picture — scallops, whelks, oysters — and the salt meadows of the Bay of Mont-Saint-Michel yield a lamb whose flavour comes from what the animals graze on the herbus.
