Seafood
Seafood
Seafood — oysters, mussels, wild or farmed shellfish — embodies the richness of France's Atlantic coastline, where cold waters and abundant plankton shape peerless marine flavours.
21 listed products
Seafood encompasses all marine species farmed or harvested along the French coastline: cupped oysters (Crassostrea gigas, sometimes Crassostrea angulata), flat oysters (Ostrea edulis), bouchot mussels — two species are farmed there, Mytilus edulis and Mytilus galloprovincialis, as well as their hybrids —, bottom-cultured mussels, prawns, octopus, scallops, sea urchins.
They are found right across the coastline: Huîtres Marennes Oléron in Charente, Huître de Normandie and Bulot de la Baie de Granville along the Manche, Coquille Saint-Jacques des Côtes-d'Armor in Bretagne, Anchois de Collioure in the Méditerranée, Caviar d'Aquitaine in Gironde. Each basin owes its distinctive qualities to its water — temperature, currents, tidal range, richness in plankton.
Shellfish reared on ropes or in oyster beds receive no artificial feed: their nourishment relies entirely on phytoplankton filtered from seawater. The designation is earned on measured criteria — bouchot mussels from the baie du Mont-Saint-Michel must reach 4 cm, a flesh content of at least 120 on the Lawrence and Scott index, and over 4% carbohydrates. The craft of the mussel or oyster farmer lies in selecting the marine terroir, managing stocking densities, and respecting natural rhythms.
