Aquitaine

Duck, chilli, walnut and ocean — four worlds in a single region.

44 products · 4 official quality signs

From the Landes forest to the hillsides of Périgord, from the Gironde estuary to the Basque valleys, Aquitaine juxtaposes lands that share neither the same soil nor the same language. The sands of the Landes yield asparagus; the causses of Périgord, walnuts and truffles; the estuary's salt meadows, agneau de Pauillac.

Fattened waterfowl hold a central place here, fed on maize brought from the Americas that became the crop of the plains of the South-West. To the south, the Pays basque sets its own tone: piment d'Espelette hung to dry in strings on facades, mountain pork, and sheep's milk cheese from the summer pastures of Iraty.
