History & Origins

Jambon du Kintoa — AI-generated illustration AI-generated illustration

Origins and birth of the product

The tradition of dry-cured ham in the Pays Basque dates back to medieval Navarre: from at least the 13th century, the kings of Navarre levied a tax known as the « droit de quinta » on pigs taken on transhumance into their royal mountains — taking one pig in every five —, giving rise to the name « Kintoa ». Mountain rearing of the Porc Pie Noir du Pays Basque perpetuates this ancestral tradition today, recognised as an AOC in 2016 and then as a PDO in 2019.

Terroir and geographical roots

Kintoa PDO is produced across a wide area of the French Pays Basque and its neighbouring cantons — 231 communes spread across the Pyrénées-Atlantiques and the Landes, including the sector's headquarters in Les Aldudes —, where Pie Noir du Pays Basque pigs are reared outdoors in forests of oak, chestnut and beech. The oceanic climate, high rainfall and foehn-type southerly winds (Haize Hegoa), which alternate with more humid air currents, create exceptional maturing conditions in the region's natural rooms. Salting is done with Salies-de-Béarn salt.

Local heritage and culture

Kintoa embodies the culinary identity of the Pays Basque, upheld by passionate farmers and artisans intimately connected to their land, who perpetuate ancestral know-how and are committed to passing it on to future generations. Since 2019, the PDO specifications have protected this ham against industrial standardisation.

Artisan producer

Each week in its own workshops, the company prepares hams, saucissons, and pork charcuterie, and cooks traditional Basque recipes. It selects produce from neighbouring farmers — local pigs, calves from the Vallée des Aldudes, Pyrenean lambs — and offers for sale other culinary treasures of the PDO (AOP) terroir (Ossau-Iraty cheese, Irouléguy wine, piment d'Espelette), alongside its own PDO Kintoa ham and pork. A guided tour is offered, featuring Basque pig farming and an educational gallery dedicated to ham, followed by a tasting. For over 30 years, the company has also organised buffets, cocktail receptions, and trade shows.

Producer Aldudes

Belaun — Coopérative des Éleveurs d'Aldudes

Co-operative

The Belaun co-operative explains that it was founded in 2010 out of the desire of farmers in the Aldudes valley to craft their own products. Its name, taken from the mountain pass linking the Aldudes valley to the Baztan valley in Navarre, means 'future generation' in Basque — the co-operative states that it aims to encourage young livestock farmers to establish themselves in the area.

It markets jambon du Kintoa PDO (AOP), charcuterie, and fresh Kintoa pork, veal, and lamb across two distinct ranges: 'Fermier', sold by each farmer under their own name, and 'Belaun', the co-operative's collective brand. Its farm shop, located in Les Aldudes, is open all year round. In February 2026, its jambon du Kintoa PDO was awarded the silver medal at the Salon International de l'Agriculture.

Maison Arka

Charcuterie

Located in the heart of the village of Sare, Maison Arka is an artisanal charcuterie workshop combined with a shop and a gourmet bistro. The establishment is run by a couple, Marianne and Tristan, artisan charcutiers by trade, who opened the shop and bistro alongside their production workshop.

Preserves, cured meats and jambon de Kintoa PDO (AOP) are prepared in-house in keeping with tradition, without nitrite salt or preservatives. The house also offers a small selection of local produce — wines, beers, gravlax trout and small sablé biscuits. The bistro serves a charcuterie platter and a gourmet menu accompanied by a wine list, to be enjoyed on a covered terrace overlooking the Rhune.
