Lorraine

Mirabelle plum orchards, saltworks, and a sugar tradition one would not expect so far north.

Lorraine combines a limestone plateau, the well-exposed slopes of the Meuse and Moselle, and a colder plain. Across these hillsides thrive mirabelle trees, a plum tree bearing small golden fruit that ripens for only three weeks a year and has forged the region's fruit-growing reputation.

The subsoil provided salt — Lorraine's saltworks have been worked since Antiquity — and salt calls for charcuterie and smoking. Yet it is sugar above all that surprises: bergamote de Nancy, dragées de Verdun, macarons, madeleines de Commercy, redcurrant jam deseeded with a goose quill. A region of confectioners, a legacy of the ducal courts.
