Between the crest of the Vosges and the Rhin, Alsace lies within a narrow plain and along well-exposed foothills. The climate is semi-continental — hot summers, sharp winters — and the table bears its mark: food is salted, smoked, and fermented. Cabbage becomes choucroute, pork becomes knack, presskopf, kassler, or farmhouse bacon.

The high pastures of the Vosges yield Munster, a washed-rind cheese whose name comes from the monastery where it was born, matured in damp cellars and washed by hand. And baking holds a place here that few regions afford it: Advent bredele made in dozens of varieties, Sunday kouglof, late-summer quetsche tarts.
