The hortillonnages are a network of market garden plots separated by canals, tended by boat, on the Somme marshes. Vegetables have been grown here for centuries in a black silt enriched by successive dredging — an agricultural landscape found almost nowhere else in France.
Further west, the Baie de Somme opens onto the salt meadows where sheep graze, and onto a coast of sand and shingle. Inland, a loamy plateau of sugar beet and cereals, and hearty, comforting cooking: ficelle picarde, flamiche aux poireaux, gâteau battu risen like a brioche.
