Cheeses
Washed-rind cheese
Washed and brushed with brine throughout maturation, the orange rind of these cheeses carries a powerful aroma — Munster, Époisses, Maroilles.
11 listed products
This category brings together soft, unpressed cheeses whose rind becomes coated in an orange-red morge through repeated washings during maturation — often with brine, sometimes with alcohol. The scent is assertive, and the flavour very often less pronounced than the aroma — Munster, Époisses, Langres, Livarot, Maroilles, Mont d'Or, Pont-l'Évêque, Soumaintrain. In Alsace and Bourgogne, washed-rind cheeses dominate. It differs from bloomy-rind cheeses, which are covered in a white down of mould rather than washed.
