This category brings together farmhouse poultry reared in extensive systems — free-range and on a cereal-based diet. What underpins the difference lies in a single line of the specifications: the minimum slaughter age. It is set at 81 days for a chicken, 94 for a guinea fowl, 126 for a poularde, 140 for a turkey or a goose, and 150 for a capon. Virtually all French PGI (IGP) poultry is featured here, from one end of the country to the other: Volaille de Bresse PDO (AOP) in Bourgogne, Volailles de Challans in Vendée, Poulet du Périgord and Volailles des Landes in the South-West, Pintadeau de la Drôme in Rhône-Alpes, Volailles d'Auvergne, d'Alsace, de Bretagne, de Houdan, de Licques, de Janzé, de Normandie or du Gers — plus their festive variations: capon, goose, guinea fowl, poularde. The open air and these additional weeks produce firmer meat, to which Label Rouge attaches its definition: a level of quality superior to that of other similar products usually marketed.
