Auvergne is a land of altitude and basalt. The Monts Dore, Cézallier, Aubrac and Cantal bear summer pastures where herds climb in spring and descend in autumn — a short, vertical transhumance that still sets the rhythm of the farming year.
From these pastures came cheeses made for keeping, crafted to endure: pressed cheeses like cantal and salers, blue-veined cheeses like bleu d'Auvergne and fourme d'Ambert. The burons, those stone huts where cheese was made on site during the summer grazing season, have fallen out of use, but not out of the landscape. The lentille verte du Puy, meanwhile, grows on the volcanic soils of a dry basin where it ripens without irrigation.
