From goat's milk to an ash-coated or natural rind — cheeses with an assertive character that embrace the terroirs of Berry, Touraine and the Mâconnais.

Goat's cheeses are made exclusively or predominantly from goat's milk. Their paste, white and firm at the centre, offers a goaty flavour that is more or less pronounced depending on ageing. Several iconic shapes stand out: the truncated pyramid (Valençay), the cylindrical log (Sainte-Maure de Touraine with its rye straw), the round pavé (Selles-sur-Cher dusted with bluish ash), the small disc (Crottin de Chavignol, Picodon) or the more substantial cheese (Charolais). In reality, goat's cheese spans every cheese family: the most classic are made as fresh cheeses, whether aged or not, some ash-coated, and there are also pressed goat's cheeses matured with a bloomy or washed rind — the tommes. Centre-Val de Loire and Auvergne-Rhône-Alpes hold the greatest number of appellations, the legacy of centuries-old goat farming tied to bocage landscapes and the causses.
