Poitou-Charentes

A butter with its own appellation, and marshes that yield oysters and goats.

The mild climate of the Atlantic coast and the limestone grasslands of Poitou have produced a distinctive milk, and a butter that earned its own designation of origin — a rarity for a processed product. The cream and butter have a hazelnut flavour attributed to the pastures.

Water shapes the rest: the Marais poitevin, the 'Green Venice' criss-crossed with canals; the claires of Marennes-Oléron, those clay maturing ponds where oysters turn green and mellow; the salt marshes of the Île de Ré. And on dry land, an ancient goat-farming tradition that has produced a family of goat's cheeses, coated in ash or matured on a leaf.
