Beneath the Combalou plateau, a rockfall hollowed out natural caves ventilated by long fissures, the fleurines, which circulate cool, moist air. This is where Roquefort is matured — and in 1411, a charter from Charles VI granted the village's inhabitants the exclusive right to do so, making this cheese one of the earliest known protected appellations.

Around it, the region stretches across very different lands: the arid causses of Quercy where melon grows and lamb is reared; high-altitude Aubrac, land of aligot and the knife; Pyrenean Bigorre and its black pig; the Gers and its poultry. Ewe's milk cheese and duck cross paths without mixing.
