Where butter ends and oil begins.

The line is ancient and very real: Provence cooks with olive oil, while northern France cooks with butter. The olive tree, a tree of drought and limestone, shapes the landscapes of the south — Vallée des Baux, pays d'Aix, arrière-pays niçois — and each terroir draws from it an oil with a distinct character, from green fruitiness to black fruitiness obtained through controlled fermentation.
All around, the garrigue provides thyme, rosemary and honey; the irrigated plains, melon, figs and cherries; the coast, the rockfish that makes bouillabaisse. And to the north, the Alpes du Sud shift into a completely different register: agneau de Sisteron, petit épeautre, high-altitude apples, mountain cheeses.
