Along the Loire and its tributaries, on the light soils of Berry and Touraine, the goat has found a land made to its measure. The cheeses produced from them are distinguished first and foremost by their shape — truncated pyramid, log pierced by a rye straw, ash-coated paving stone, small disc — a visual signature that identified the village of origin long before any official designation took over.

All around, a land of orchards, grain and game: the Sologne and its ponds, the Beauce and its wheat, the tuffeau slopes where cellars are dug. The table here is gentler than elsewhere — rillettes, Easter pâtés, upside-down apple tart, quince cotignac.
