To the north-east, the Alps impose their logic: summer mountain grazing, large wheels for keeping made at altitude to last through the winter — beaufort, abondance, tomme and emmental de Savoie —, and the washed-rind cheeses of the valleys. Every massif has its cheese, and the cheese tells of the altitude at which it was born.

In the centre, Lyon has built an urban cuisine of charcuterie and offal, served in narrow dining rooms: rosette, cervelas, quenelle. To the south, the Rhône Valley tilts towards the Midi — olives and huile de Nyons, abricot des Baronnies, ail de la Drôme, nougat de Montélimar — and the Ardèche, on its schists, clings to its chestnut.
