Charcuterie
Charcuterie
Cured meats, pâtés and terrines — the charcutier's craft, transforming meat into long-keeping foods rooted in terroir.
49 listed products
This category brings together processed meat products: dry-cured hams, saucissons, sausages, pâtés, terrines, rillettes, foie gras and cured meats. Whether goose or duck, foie gras d'Alsace is its regional flagship — a tradition of rearing and gavage traced back to the 18th century, yet one that bears no official quality sign of its own: the PGI (IGP) 'Volailles d'Alsace' covers free-range chickens and turkeys, not foie gras production.
It is everywhere: Coppa de Corse and Figatellu in Corse, Andouillette and Grattons lyonnais in Lyon, Saucisse de Morteau in Franche-Comté, Jambon de Bayonne in the Pays basque, Rillettes de Tours in Touraine.
The boundary of this category comes down to a single word: transformation. A free-range bird sold as is — chicken, capon, goose, guinea fowl — is meat, not charcuterie, even when its producer also makes the latter.
